Meals & Recipes
When I cook for myself and my friends, I try to create healthier alternatives to popular recipes.
I also add a touch of Creole and Melungeon seasoning and spice to pretty much everything.

Ground beef is seared in a pan:
(Place a block of room-temperature, patted-dry ground beef into a pre-heated (hot) pan,
allowing the bottom to brown without disturbing it, then flipping it to sear the other side
before breaking it up and continuing to cook until it's browned and crispy.
This technique creates flavorful crusts and avoids the gray, steamed appearance
of ground beef cooked in a cold pan.)
Break up the block with a spatula and brown the inside, then drain the fat. Reduce heat to low.
Sautée onions and garlic in a large saucepan. Add wine and tomato paste to form the base.
Add desired herbs and spices (mushrooms, rosemary, etc.)
Add the browned beef to the sauce.
Simmer gently for a few hours or place in a slow cooker on low setting.
Finish cooking the pasta in the pan with the meat sauce, Or
Toss the cooked pasta directly with the meat sauce just before serving
